{make your own} Coconut butter.

This is almost too easy!

What you’ll need:

*A good,efficient food processor

* At least four cups unsweetened, dried coconut flakes

coconutstartProcess until the flakes are smooth…like, dripping smooth.  It’ll go form finely chopped, to a grainy liquid then to a smooth liquid.  Pour into a jar (we use a mason) and let sit for about 5-15 mins to let it set up.

coconutgettingtherecoconut butterPure coconut taste but is rich and as calorie dense as almond butter or even peanut butter.  It is SOOOO good!  Dan has been eating it just plain, by the spoonful.  Would go great melted on top of oatmeal, on a sweet potato or in smashed sweet potatoes, with dark chocolate chips, drizzled on waffles/pancakes or used in a curry dish.  So versatile!
